Whole Spelt Chocolate Poppy Seeds Muffins, with Avocado Chocolate Frosting

Spelt flour poppy seeds chocolate muffinsIngredients:
1 cup Spelt flour
1 tsp baking powder
2 tbsp organic cocoa powder
1/4 cup agave syrup / brown rice syrup
1/4 cup organic cane sugar
100g ground poppy seeds
1 large Grand Smith apple – peeled and coarsely grated
1/4 cup grapeseed oil / peanut / any other healthy oil
3/4 cup goat yogurt
2 organic eggs
1/5 tsp cinnamon
1/4 tsp cardamom
1 vanilla bean

Preparation:
1. Mix the flour, baking powder, cocoa, poppy and spices.
2. create a small hole and put the apple inside, and mix.
5. In a separate bowl mix eggs, oil and yogurt and pour the entire amount at once to dry ingredients and stir with a wooden spoon into a uniform mixture, but not too much.
5. greased muffin pan and fill them almost to the end. Bake at 360F (180C) for 25-30 minutes until a toothpick comes out clean.
