Espresso Spelt and Almond Flour Cookies


1 cup spelt flour

3/4 cup oat flour

1 cup almond flour

1/2 cup melted coconut oil

1/4 cup + 2 tablespoons grapeseed oil / Walnut oil

1/3 cup coconut sugar

1 vanilla bean

1 organic egg

1 organic egg protein

1.5 tsp. espresso powder


1. Mix the flour with almonds, coconut sugar and espresso powder, and set aside.
2. In a mixer bowl, mix the egg, protein and vanilla until mixture is white and fluffy. 3. Carefully add the melted coconut oil (cold), while stirring, and then add the grape seed oil. 4. Transfer the flour mixture to the bowl, and mix well until dough is smooth. 5. Remove the dough and knead slightly with your hands. Chill and refrigerate for half an hour. 6. Place the dough on the work surface and divide into circles the size of a tablespoon. Flatten and cut out shapes with cookie cutters. 7. Bake at 320F (160C) for 15-20 minutes, until golden at the edges. 8. Love. Eat. Enjoy 😉
